In The Kitchen: Bread Making

There are a couple reasons I have developed such an extreme method to baking my own bread. One was the alarming number of people I knew having stomach issues. I set out to do my part to help my family NOT go down that road. So when I started reading about phytic acid in the wheat, it made sense.

Grain contains phytic acid. Phytic acid inhibits absorption of some nutrients. Soaking grains like our ancestors have done for thousands of years is the traditional and simple answer to the many digestion problems we are dealing with today. Click [HERE] for a more detailed article.

Another reason for baking bread this way is the obsession I have with things that are homemade, from scratch. I think that homemade bread, fresh out of the oven, is served in Heaven, dripping with butter and honey. Well, I want my kids to remember Mom’s kitchen with those smells and tastes. Heavenly!

The first step is making Greek yogurt! We LOVE Greek-style yogurt. After the yogurt firms up, I strain out most of the whey. This is the acid medium that I will use to soak the wheat.

Next,I grind the organic, non-GMO wheat berries. To read more about the brand and description of wheat we use, click here. Then I add the whey and water and let it sit overnight. In the morning, I add yeast and let that work, while I go out and milk the cow! Bet you don’t know too many people who do that. Once that’s finished, I add the olive oil, unbleached flour, and salt. Then, I let dough knead in my Bosch mixer while I prepare the pans with organic butter.  For the Cinnamon Raisin Swirl, I will roll out the dough. I sprinkle on the goodies, brown sugar, Vietnamese cinnamon, and lots of raisins! Then I roll it up and let it rise. Into the oven it goes. Heavenly smells.

I make each batch of bread 5 loaves at a time, with the same careful attention to taste, cleanliness (ask my kids, I am a clean freak!), and health that I would for my own family. From my kitchen to yours!
